She’s very touchy/uptight.
Isn’t that a great way to say that she flies off the handle at the drop of a hat? Or bursts into tears, or takes offense… We are not told what she is susceptible to , but the word certainly conveys the notion of her fragile state of mind. We all walk on eggshells around her, for fear of saying the wrong thing.
Note that bien is another way of saying très. They are almost, but not quite, interchangeable as an intensifier for an adverb. You could think of it as the difference in English between very (très) and thoroughly (bien).
Just watch your step around her. You don’t want to start anything!
